“Pacific Sunset”
Ingredients:
– 2 oz dark rum
– 1 oz pineapple juice
– 1 oz orange juice
– 1 oz lime juice
– 1/2 oz coconut cream
– 1/2 oz simple syrup
– 1/4 oz tiki bitters
– 1/4 oz allspice dram
– 1/4 oz grenadine
– Coconut fat washed rum*
– Tiki mug and edible flowers for garnish
Instructions:
1. In a shaker, combine all the ingredients except for the coconut fat washed rum.
2. Add ice and shake well.
3. Strain the mixture into a tiki mug filled with crushed ice.
4. Slowly pour the coconut fat washed rum over the back of a spoon, creating a layered effect on top of the drink.
5. Garnish with edible flowers and a straw.
6. To make the coconut fat washed rum, melt 1/4 cup of coconut oil in a pan and add 8 oz of dark rum. Let it cool and freeze until the coconut oil solidifies on top. Strain the mixture through a fine mesh strainer to remove the coconut oil, leaving you with a smooth and creamy coconut fat washed rum.
